Spaghetti with roman pecorino cheese and black pepper

This is the recipe for a traditional Roman dish, spread all over Lazio. At the time the dish was specially salted and peppered by the owners of the inns in order to feed the customers' desire to "drink" thus leading to the purchase of drinks to remedy the problem.

The ingredients are very simple and easy to find, but the choice of cheese is fundamental to say the least: Pecorino Romano is the only and essential cheese approved to complete the traditional recipe! With this scope, moreover, its poverty is highlighted, which however does not compromise its goodness.

Ingredients

  • 13,4 (380 g) of spaghetti or bucatini
  • 6,3 (180 g) about of roman pecorino cheese
  • Ground black pepper q.s.
  • Extra virgin olive oil
  • Salt q.s.

Preparation

  1. Cook the pasta in abundant salted water.
  2. Drain and season it with plenty of pepper and cheese (keep a little), add a spoon or more of the cooking water and stir until creating a creamy dressing.
  3. Serve hot garnished with the cheese and pepper set aside.
