Description
A mix of carbohydrates and proteins, easy to make and very good indeed. Small and simple ideas to make even the most capricious children eat with taste.
We offer you a basic version, but it's up to you to enrich the recipe at will by adding for example a slice of ham together with the slice of cheese inside.
Ingredients
- 4 medium potatoes
- 2 spoons of grated parmesan
- 2 eggs
- Salt
- Black pepper
- Stringy and tasty cheese
- Bread crumbs q.s. (also flavored)
- Extra virgin olive oil
Preparation
- Wash the potatoes by removing soil and impurities and boil them with all the peel in plenty of water. Check the cooking by skewering the center with a skewer, if you do not encounter difficulties, it means that the potatoes are cooked evenly. Drain and leave to cool.
- Once cold, peel the potatoes and mash them with the appropriate tool (pressure steel potato masher or a simple hand masher). Add an egg (or just the yolk), grated parmesan to the mixture and season with salt and pepper.
- Mix well until a uniform and compact mixture is created. Take a portion of the mixture in your hands, crush it, stuff it with the slice of cheese and close it. Pass the medallion first in the beaten egg and then in the flavored breadcrumbs (with aromatic herbs, salt and pepper). Place all the medallions on a pan, sprinkle the base of the pan and the medallions with oil and bake in a hot oven at 180-200°C for about 12-15 minutes. Turn halfway through cooking.
